Remember, when your animal is reserved, we make an appointment with our USDA processing team.
We farm team delivers the reserved animal for processing and then we have the beef dry-aged for 21 days, and then your beef is processed. Part of the reservation fee is used for the harvest fee and part is used to pay for the space for dry-aging for 21 days.
